Make it Monday: Cream Cheese Mints




     I know I would normally have a "craft" here, but this week, I thought I would do something "edible." But it's also sort of fun to play with, and if you color it, you can do stuff like you would with play dough. However, this is a lot stickier than play dough. So you might want to proceed with caution with allowing younger children to do this.

     If you have never had cream cheese mints--well, you don't know what you're missing! They are sooo good! Normally when I have them they are molded into little roses for weddings. But as you can see here, you can make all kinds of stuff with it.

     To make it, you will need:
     4 oz softened cream cheese
     3 1/2 cups powdered sugar
     1/4 tsp peppermint extract
     food coloring
     granulated sugar

     What I did was put the cream cheese in my Kitchenaid mixer with the dough hook and added the powdered sugar one cup at time. Sometime in all this, also add the peppermint extract. You may have to scrape the sugar off the side of the bowl occasionally.



     After it is all mixed, divide it into however many colors you want. I stuck with three.



     I sprinkled a little sugar on this silicon mat I have to keep the dough from sticking on it. You may want to keep a bowl of sugar near by and occasionally put the dough in it to make it less sticky. Then have fun and shape it how you want!
     I sprinkled sugar on a cookie tray to put the shapes on.


     Then stick it in the freezer for a couple hours. They will hold together better that way.
     If you want to use this recipe for party mints, the proper method is to roll the dough into little balls, roll them in sugar and press them into molds. Then pop them out of the mold. They are best kept frozen until close to time to serve! They will not melt, but will get more sticky at room temperature.
