Tasty Tuesday: Soy/Pineapple Marinated Chicken
This is a very flavorful chicken breast recipe, which I am always on the lookout for! Marinated in soy sauce and pineapple juice, this makes a sweetly savory dish that is sure to please. Tasty Tuesday: Cream Cheese Chocolate Pie
I've got a dessert recipe today! It involves chocolate pudding and cream cheese. This is a dessert my gandmother used to make and it had been a long time since I'd had it, but I decided to make it for my dad when my parents came to visit recently. I know I would normally have a "craft" here, but this week, I thought I would do something "edible." But it's also sort of fun to play with, and if you color it, you can do stuff like you would with play dough. However, this is a lot stickier than play dough. So you might want to proceed with caution with allowing younger children to do this.

Tasty Tuesday: Spanokopita
Here is a really great recipe for spanokopita, a Greek pastry made with spinach and feta. It is really good but kinda greasy!

1/2 a 1 lb bag frozen spinach, steamed, drained and chopped

Make It Monday: DIY Powdered Sugar
Did you know you can actually make your own powdered sugar? It's actually quite easy. And what's even better is you can make your own low calorie powdered "sugar" by applying the same method to erythritol, as I did in the pic above. You could also do it with Splenda, but since Splenda is artificial and erythritol in natural, I've been using erythritol for my sugar-free baking. Read the rest of this post.

Tasty Tuesday: Peanut Butter Freezer Fudge
I got this recipe from Money Saving Mom for Peanut Butter Freezer Fudge. It looked super-yummy in her pictures and it had few ingredients, all of which I had. So of course I had to try it out. It was really more like a candy, when all was said and done, and it didn't really taste too different than if I had just eaten peanut butter and chocolate chips together.
I halved the recipe I saw. I didn't have quite enough peanut butter to make a whole recipe and I wanted to make sure I really liked it first, anyway. So here is what I used:
1/2 cup peanut butter
3/4 TBSP maple syrup
2 TBSP coconut oil
1/4 tsp salt
chocolate chips
First, cream everything except the chocolate.
